It’s an exciting milestone around the farm—our hens have started laying their first eggs!
These first eggs are called pullet eggs. A pullet is a young female chicken that hasn’t reached full maturity yet, and her first eggs are typically smaller than the eggs she’ll produce once she’s fully grown. They’re every bit as real and delicious as a full-sized egg—just a little smaller and extra special because they’re the first!
We’re hoping to offer a very limited supply of pullet eggs in October and November 2026 at the Corvallis-Albany Farmers’ Markets. Since our young hens will just be getting started, quantities will be small and availability may vary from week to week.
As our hens mature, their eggs will gradually increase in size. By spring, we expect to have a much more consistent supply of full-sized eggs available.
We’re excited to share this first little milestone—and hopefully, some of those very first eggs—with you this fall!
